This knife has been a favorite of charter and commercial fishers for years. It is capable of filleting and deboning perch and other small panfish, as well as many types of larger fish. It can also be used to cut small portions of beef or poultry. Over time, the blade may develop a black patina, but this is completely normal during the course of using it.
